Chile Brie Spice Bites

Chile Brie Spice Bites and Chile Brie Cranberry Pecan Bites 

Ingredients:

2 sheets of thawed frozen puff pastry
8 oz brie cheese
For the Chile Brie Spice Bites, use the following
FCC Red Chile Roast
FCC Red & Green Blend
FCC Pure Green Chile
FCC Hatch Red Chile Powder
FCC Hatch Green Chile Powder.

For the Chile Brie Cranberry Pecan Bites, use the following
FCC Hatch Red Chile Powder
12 oz fresh cranberries
1/2 cup sugar
FCC Dark Chocolate Pecans
FCC Glazed Praline Pecans.

Make the homemade cranberry sauce by putting 12 oz of fresh cranberries, 1/2 cup sugar, 2 tablespoons of FCC Red Chile Powder, and 1 cup of water in a 2-quart pan. Cook on high until berries pop, simmer low for 5 minutes, stirring frequently. Set aside to cool.
Position oven racks in the upper and lower 1/3 of the oven. Preheat to 375°. Oil two 24 count mini muffin pans unroll two puff pastry sheets on a lightly floured work surface. Roll each into a 10 X 14-inch rectangle. Cut each sheet into 24 equal squares. Press each square into the muffin tins making a puff pastry cup. With tines of a fork, prick each bottom three times.

Cut the brie into 48 equal pieces and place one piece of brie in the center of each pastry cup. In 24 cups, lightly sprinkle the FCC Red Chile Powder on 16 pieces of brie and FCC Green Chile Powder on 8 pieces of brie.
Bake the pans on the upper and lower thirds of the oven for 18 to 20 minutes until the pastry is puffed and corners are golden brown. Switch the upper and lower pans halfway through. Remove from oven.
In the muffin tin that has been sprinkled with the chile powder, top the 8 with the green powder with 1 teaspoon each FCC Pure Green Chile, for the remaining 16 with the red chile powder, top 8 with 1 teaspoon each FCC Red Chile Roast, and top 8 with 1 teaspoon each FCC Red & Green Blend. This gives you the fun of all the flavors! Gently use a fork to transfer them to a serving plate.

For Chile Brie Cranberry Bites, top 24 with 1 teaspoon of homemade cranberry sauce. On 12, garnish with FCC Glazed Praline Pecans, and 12 with FCC Dark Chocolate Pecans. Transfer to a serving dish.
Serve hot or room temperature and enjoy
