Hatch Green Chile Pizza with Smoked Meats and Sun-Dried Red Chile Sauce

(This recipe makes two 12-inch pizzas)

Ingredients:

Pizza Dough (Yields 6–8 dough balls):

  • 6 cups all-purpose flour
  • 2½ cups warm water
  • ¼ cup olive oil
  • 3½ teaspoons sugar
  • 2¼ teaspoons kosher salt
  • 6½ teaspoons dry yeast

Toppings (For 2 pizzas):

  • ½ lb Conecuh smoked sausage, grilled and sliced into rings
  • ½ cup smoked bacon, cooked and chopped
  • ½ lb grilled or smoked chicken breast, diced
  • 1 cup Fresh Chile Co. Pure Green
  • Salt and black pepper to taste
  • 1 cup Fresh Chile Co. Sun-Dried Red Chile Sauce
  • 2 cups fresh mozzarella, thinly sliced (smoked, if available)
  • 1 cup shredded smoked pepper jack cheese

Instructions:

  1. Make the Dough: In a bowl, combine water, yeast, sugar, and salt. Let it sit until foamy. Add olive oil and mix. Stir in flour and knead by hand for 4–5 minutes. Divide into dough balls and refrigerate or freeze until ready to use.

  2. Cook the Toppings: Grill Conecuh sausage and slice into thin rounds. Cook bacon until crisp. Grill or smoke the chicken and dice.

  3. Preheat Oven or Grill: Heat your oven, Big Green Egg, or pellet smoker to 500°F (or as hot as it will go). Place a pizza stone if using.

  4. Assemble the Pizza: Shape two dough balls into 12-inch rounds. Spread each with Sun-Dried Red Chile Sauce. Top evenly with bacon, sausage, chicken, and Pure Green Chile. Sprinkle with salt and pepper to taste.

  5. Add Cheese: Divide the mozzarella slices and shredded pepper jack cheese evenly over both pizzas.

  6. Bake: Place pizzas on the hot stone and bake for 12–15 minutes or until the crust is golden and the cheese is melted and bubbly.
