Hatch Green Chile from Hatch, New Mexico has a flavor unlike anything else in the world, and we love finding new ways to enjoy it. This time, we are in the kitchen with Randy and his daughter Jenna, making something that brings together tradition, family, and plenty of Hatch Chile flavor.
Our Red on Red Hatch Chile Pizza starts with our signature Fresh Red Chile Sauce blended with marinara for a rich, smoky base. Together, we top it with fresh mushrooms, red bell pepper, roasted jalapeños, and tangy goat cheese before baking it to golden perfection.
This recipe is a little bit of New Mexico tradition, a little bit of family time, and a whole lot of Hatch Chile goodness.
Ingredients (Serves 4)
• 1 Ball pizza dough (homemade or store-bought)
• Flour and cornmeal for dusting
• ½ Cup Fresh Chile Co Fresh Red Chile Sauce
• ½ Cup marinara sauce (slightly sweet variety works best)
• 1 ½ Cups grated cheese (asadero, mozzarella, or muenster)
• ½ Cup sliced mushrooms
• ½ Cup sliced red bell pepper
• 1–2 Fresh Chile Co Red Jalapeño Roast
• 3 oz goat cheese, crumbled
• Optional: black olives or other favorite toppings

Instructions
1. Prep the dough
• Lightly flour your work surface. Roll the pizza dough into a circle slightly thinner than your desired thickness (it will spring back a bit before baking).
• Dust your pizza peel or baking sheet with flour and plenty of cornmeal, especially at the front, to help the pizza slide off easily.
2. Make the sauce
• In a bowl, mix the Fresh Red Chile Sauce and marinara sauce in equal parts until well combined. This blend creates a rich, sweet-spicy base.
3. Assemble the pizza
• Spread the sauce evenly over the dough, going close to the edges without pressing too hard.
• Sprinkle a light layer of grated cheese over the sauce.
• Evenly distribute the mushrooms and red bell pepper.
• Add any other favorite toppings like black olives.
• Sprinkle another layer of cheese over the vegetables.
4. Add the heat
• Spoon chopped roasted jalapeños across the top for a smoky, spicy kick.
5. Finish with goat cheese
• Scatter crumbles of goat cheese evenly over the pizza. The tangy flavor pairs beautifully with the Hatch Red Chile.
6. Bake
• Transfer the pizza to a preheated oven or pizza oven at 475°F. Bake until the crust is golden and the cheese is melted and bubbling, about 10–12 minutes.
7. Serve
