Lazy Guy Rellenos with Red & Green Chile Blend
(This recipe serves 2–4 depending on appetite)
Ingredients:
- 2–3 corn tortillas per person
- 1 cheese-stuffed, roasted and peeled long green chile per tortilla
- (Use sharp cheddar, longhorn, or Monterey Jack — whatever suits your mood!)
- Shredded extra cheese for finishing
- Fresh Chile Co. Red & Green Blend (as needed)
- Eggs (1 per person), cooked sunny side up
- Cooking spray
- Optional: crushed red chile flakes
Instructions:
1. Prep the Tortillas: Heat a skillet over medium-high. Lightly spritz with cooking spray. Add tortillas and warm just until flexible.
2. Stuff and Fold: Place one stuffed chile in each tortilla and fold over.
3. Heat the Rellenos: Place folded rellenos back in the skillet, turning once to warm through, melt the cheese, and lightly brown the tortilla. Tortillas should be soft enough to cut with a fork.
4. Cook the Eggs: Remove rellenos and set on plates. Spritz skillet again and cook eggs sunny side up.
5. Assemble the Plate: Spoon warmed Red & Green Chile Blend over each relleno, sprinkle with extra cheese, and top with eggs.
6. Add Heat (Optional): A shake or two of crushed red chile flakes gives an extra kick.
