Carol's BOB: Beef, Onion & Bacon Roll

Ingredients: Rolls

  • 3 lbs Top Sirloin Steak
  • 1lb of bacon
  • 1 large onion, cubed

Ingredients: Sauce

  • 24 oz of Tomato Sauce
  • 2 Tbsp Parsley Flakes
  • 2 Tsp Garlic Powder
  • 2 Tsp Celery Seeds, crushed
  • 28 oz diced tomatoes
  • 4 Tbsp Worcestershire Sauce
  • ½ Jar of Fresh Hatch Red Chile Sauce

Instructions:

1. Prepare the Steak

First, lay out your top sirloin steak, place plastic wrap over the steak, and tenderize it by hitting it into the steak with the side of a plate. Be careful not to go through the plastic wrap. Repeat the process on both sides.

2. Trim

Remove any excess fat from the now tenderized steak.

3. Cut Steak

Next, cut the steak into slices the same width as your bacon strips.

4. Assemble

Place a slice of bacon over a steak strip, add onion, and roll, securing with a toothpick. Repeat with all steak strips and bacon.

5. Place in Skillet

Place rolls in a Medium-High skillet. Tossing in any leftover onions and cover. While the rolls are cooking, make the sauce.

6. Combine Sauce Ingredients

Combine all sauce ingredients in a bowl and mix well.

7. Add Fresh Hatch Red Chile Sauce

Once mixed well add in ½ jar of Fresh Red Chile Sauce, Mix well. Add mixture to the skillet pouring over BOB Rolls.

8. Cook on Medium - Low

Cover and reduce temperature to Medium-Low and cook for 25 minutes. Flip rolls to have them fully coated. Serve & Enjoy!
