Carol’s Green Chile Tacos | Fresh Chile Cookin’ with Carol

Hello, this is Carol with the Fresh Chile Company and today she is sharing one of her favorite quick dinners, her Pure Green Chile Tacos. This simple recipe starts with lean hamburger and finishes with a generous spoonful of Pure Hatch Green Chile for a taco that is full of Hatch flavor and perfect for busy weeknights.

In this Fresh Chile Cookin’ episode, Carol shows how easy it is to turn one pound of ground beef and a jar of Pure Hatch Green Chile into a versatile taco filling you can enjoy all week. Make a small batch for two or scale it up for a hungry family. Leftovers are perfect for breakfast burritos, pizza, spaghetti, lasagna or anything that needs a boost of Hatch flavor.




Carol’s Pure Green Chile Tacos

This recipe makes about 4 to 6 tacos using 1 pound of hamburger. Double or triple the meat if you are cooking for a family.

Ingredients

  • 1 pound lean ground beef
  • Optional: 2¼ pounds ground beef if cooking for a family
  • ½ jar Pure Hatch Green Chile for 1 pound of meat
  • 1 full jar Pure Hatch Green Chile if using 2¼ pounds of meat
  • Corn tortillas
  • Shredded cheese, such as asadero or sharp cheddar
  • Shredded cabbage
  • Cherry tomatoes, sliced
  • 1 ripe avocado, sliced
  • Optional: chopped onion for cooking with the meat

Instructions

  1. Brown the hamburger. Add the ground beef to a skillet and brown over medium heat, breaking it apart as it cooks. Add onions if you like them. Cook until no longer pink.
  2. Add the Pure Hatch Green Chile. Stir in Pure Green Chile. Use half a jar for one pound of meat or a full jar for 2¼ pounds. Let it warm through and blend into the meat. Carol does not drain the beef since she uses lean hamburger.
  3. Simmer. Reduce heat and let the mixture simmer. The longer it simmers, the richer the flavor. You can also make this in an electric skillet or crock pot and let it cook on low all day.
  4. Warm the tortillas. Heat corn tortillas in a dry skillet until soft and pliable.
  5. Assemble the tacos. Add a base layer of shredded cheese to each tortilla, spoon in the taco meat, then top with more cheese so it melts.
  6. Add toppings. Add shredded cabbage, cherry tomatoes, avocado slices and a little extra Pure Green Chile if you want more heat.
  7. Serve. Enjoy warm and serve with forks for any delicious filling that falls onto the plate.

Make Once, Eat All Week

When Carol’s five kids were still at home, she often made a big batch of this taco meat at the beginning of the week. Leftovers were used for breakfast burritos, taco pizza, spaghetti sauce, lasagna or any dish that needed a quick and flavorful protein. This taco meat stores well and tastes even better the next day.
