Salmon Green Chile Soup
2 tablespoons olive oil
A small onion chopped
3 garlic cloves, sliced
½ teaspoon kosher salt
1 teaspoon FCC Hatch Green Chile Spice
4 cups vegetable broth
½ cup pearl couscous
16 ounces skinless salmon fillets
1 cup halved cherry tomatoes
1/2 jar FCC Pure Green Chile
Fresh cilantro to taste
Heat the oil in a large saucepan over medium-high heat.
Add the onion, garlic, salt, Hatch Green Chile Spice, and cook.
Stirring for 1 minute, then add the broth and bring to a boil.
Add the couscous; reduce heat to medium-low, and simmer for 5 minutes.
Add the salmon, tomatoes, and green chile.
Cook, stirring gently, until the salmon is cooked through (about 8 to 10 minutes).
Break the salmon into pieces and sprinkle with fresh cilantro.
Serve and enjoy!!
