GREEN CHILE CHICKEN NOODLE SOUP | FRESH CHILE COOKIN’ WITH RANDY

In this episode of Fresh Chile Cookin’, Randy shares his go-to comfort food for the cooler months: Green Chile Chicken Noodle Soup. Made with homemade chicken broth, fresh vegetables, egg noodles, and a kick of Hatch Green Chile, this soup is soothing, hearty, and packed with flavor.

Ingredients

  • 1 roasted chicken (meat removed, bones reserved for broth)
  • Homemade chicken broth (or quality store-bought stock)
  • 3 carrots, sliced
  • 2 stalks celery, chopped
  • 1 large onion, diced
  • 3 cloves garlic, smashed
  • 1 orange or red bell pepper, chopped
  • 1 tbsp dried parsley (or fresh)
  • Egg noodles (German-style or your favorite kind)
  • Hatch Chile of choice (Randy uses Fresh Chile’s Matador Red & Green Blend)
  • Salt and pepper, to taste
  • Optional: sour cream, fresh tomato chunks, extra chile for topping

Directions

  1. Start by preparing your broth. Boil the roasted chicken bones in water to create a rich chicken stock. (You can freeze stock for future batches.) If you don’t make homemade broth, use a high-quality store-bought chicken stock.
  2. Bring broth to a simmer in a large pot. Add sliced carrots first, as they take the longest to cook. Simmer for about 5 minutes.
  3. Add onion, celery, bell pepper, and dried parsley. Smash garlic cloves and stir them in for maximum flavor. Season lightly with salt and pepper.
  4. Continue simmering until vegetables are tender, about 20–30 minutes.
  5. Add egg noodles and cook according to package directions (about 10 minutes) until tender.
  6. Just before serving, add the roasted chicken pieces back into the soup so they stay moist and flavorful.
  7. Ladle hot soup into bowls and top with Hatch Chile to your spice preference. Randy uses Fresh Chile’s Matador Red & Green Blend for smoky heat.
  8. Optional: garnish with sour cream and fresh diced tomatoes for a bright finish.
