Stuffed Hatch Green Chile Peppers

(This recipe serves 4)

Ingredients:

  • Raw Hatch green chile peppers
  • 1 lb ground beef
  • 1 tsp Fresh Chile Co. Red Chile Powder
  • 1 tsp Fresh Chile Co. Green Chile Powder
  • 1/2 tsp chipotle pepper powder
  • 1/2 tsp cumin
  • 1 tsp steak seasoning (like Grilling Gods Steak and Bake)
  • 1/4 cup grated Parmesan cheese
  • Bacon strips (enough to wrap each pepper)

Instructions:

1. In a bowl, mix ground beef with red chile powder, green chile powder, chipotle powder, cumin, steak seasoning, and Parmesan cheese.

2. Stuff the raw Hatch green chile peppers with the beef mixture.

3. Wrap each stuffed pepper with a strip of bacon.

4. Preheat smoker or oven to 325°F.

5. Place stuffed peppers on the smoker or a baking sheet.

6. Cook for about 1 hour, or until the bacon is crisp and the meat is fully cooked.

7. Let cool slightly before serving.

Serving Tip:
These smoky, spicy stuffed Hatch green chile peppers are perfect as a bold main dish or a standout appetizer. Serve hot with a side of beans, rice, or a cool crema for dipping.
