Shrimp Enchiladas with Hatch Pure Green Chile
(This recipe makes about 4 servings)
Ingredients:
- 1 lb shrimp, peeled and deveined
- 2 tablespoons garlic olive oil
- 1 teaspoon sea salt
- 3 cloves garlic, minced
- 1 tablespoon chopped cilantro
- 1 teaspoon lemon pepper garlic seasoning
- 1 jar Fresh Chile Pure Green Chile
- 1 (10 oz) can Las Palmas Green Enchilada Sauce
- 8 corn tortillas
- 2 cups shredded Pepper Jack cheese
- 1/4 cup chopped green onions
Instructions:
1. Cook the shrimp: Sauté shrimp in garlic olive oil with sea salt, minced garlic, chopped cilantro, and lemon pepper garlic seasoning. Cook until pink and just cooked through. Set aside.
2. Make the enchilada sauce: In a saucepan, heat Fresh Chile Co. Pure Green Chile with the can of Las Palmas Green Enchilada Sauce and a splash of garlic olive oil. Simmer on low for about 10 minutes to blend flavors.
3. Prepare tortillas: Lightly sauté each corn tortilla on one side in garlic olive oil to soften.
4. Assemble the enchiladas: Spread a spoonful of the green chile enchilada sauce on each tortilla. Add 3 shrimp and a small handful of Pepper Jack cheese. Roll tightly and place seam-side down in a baking dish.
5. Top and bake: Pour remaining sauce over the enchiladas. Top with more Pepper Jack cheese, the rest of the shrimp, and chopped green onions.
6. Bake: Bake at 375°F for 20 minutes until the cheese is melted and bubbling.
Serving tip: Serve hot with a side of rice or salad. These enchiladas are packed with bold Hatch Green Chile flavor and a touch of citrusy garlic shrimp.
