This recipe makes 1 large pizza
We’ve made Hatch Red Chile pizza. We’ve made Hatch Green Chile pizza. Now it’s time for the full “Christmas” experience a bold, cheesy blend of both on top of creamy Alfredo and fresh sautéed shrimp.
This pizza is one of Randy’s favorites, and for good reason. The flavors come together in perfect balance: smoky, sweet, creamy, and just the right amount of heat.
Ingredients:
For the shrimp:
- 1/2 lb fresh shrimp, peeled and deveined
- 1 tablespoon butter
- 2 cloves garlic, minced
- Juice of 1/2 lemon or orange
For the sauce:
- 1 cup fresh Alfredo sauce (preferably from a local Italian restaurant)
- 1/4 cup Fresh Chile Hatch Red Chile Sauce
For the pizza:
- 1 ball of pizza dough
- 1/2 cup shredded mozzarella (divided)
- 1/4 cup sliced mushrooms
- 1/4 cup diced Hatch purple onions
- 1/4 cup diced red bell peppers
- 1/4 cup Pure Hatch Green Chile
- Optional: goat cheese (if you’re not allergic, like Carol)
Instructions:
- Preheat your pizza oven to 750 to 800°F. Wood-fired is best for that perfect crust and smoky finish.
- Sauté the shrimp
- In a skillet, melt butter over medium heat. Add garlic and a squeeze of citrus. Toss in shrimp and sauté until just turning pink. Don’t overcook — they’ll finish in the oven. Remove from heat, squeeze the tails, and chop the shrimp into chunks.
- Make the sauce
- In a bowl, mix the Alfredo sauce with Fresh Chile Co. Red Chile Sauce until you get a rich, pink blend.
- Roll out your dough
- Lightly flour your surface and rolling pin. Stretch the dough out in all directions to form a circle slightly larger and thinner than you want (it will shrink and thicken slightly when cooking).
- Build your base
- Spread the red chile Alfredo sauce evenly over the dough. Go light on pressure so it doesn’t stick to the pizza peel.
- Add toppings
- Sprinkle a light layer of mozzarella
- Add mushrooms, Hatch onions, red bell peppers
- Distribute shrimp evenly
- Add another layer of mozzarella
- Finish with chopped Hatch Green Chile for that classic New Mexico Christmas look
Bake the pizza
Slide it into the oven. Rotate one-third every minute or so. Total bake time is around 3 minutes in a 750 to 800°F oven. You want the cheese bubbly, edges browned, and the bottom crisp but not burnt.
Serving Tip:
Let it rest for a minute, then slice it up and listen for that signature crunch. Serve hot, and prepare for compliments.
