Red and Green Chile Enchiladas with Hatch Flavor
(This recipe makes about 18 enchiladas, serves 6 to 8)

Ingredients:

For the sauce:

  • 2 tablespoons canola oil
  • 2 tablespoons flour
  • 2 jars Fresh Chile Co. Red Chile Sauce (rinsed with a bit of water)
  • 2 cups chicken broth
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder  

For the filling:

  • 1 lb ground beef
  • 1 teaspoon onion powder
  • 1 tablespoon homemade taco seasoning (or your preferred blend)
  • 2/3 jar Fresh Chile Co. Pure Green Chile
  • 1 cup chopped green olives
  • 1/2 cup chopped black olives  

For assembly:

  • 18 corn tortillas
  • 1/4 cup canola oil (for softening tortillas)
  • 3 to 4 cups shredded cheddar cheese  

Instructions:

1. In a medium saucepan, heat canola oil and flour over medium-high heat. Stir until the mixture bubbles and begins to lightly brown.

2. Add both jars of Fresh Chile Co. Red Chile Sauce (plus the rinse water), chicken broth, salt, pepper, garlic powder, and onion powder. Stir well, bring to a boil, then reduce to a simmer while you prepare the filling.

3. In a separate skillet, brown the ground beef with onion powder and taco seasoning. Drain excess grease.

4. Stir in Fresh Chile Co. Pure Green Chile, chopped green olives, and black olives. Mix until well combined, then remove from heat.

5. In another pan, heat 1/4 cup canola oil. Soften each corn tortilla by frying it for about 1 minute per side. Transfer to paper towels to blot excess oil.

6. Preheat the oven to 350°F.

7. Pour 1/2 cup of the red chile sauce into the bottom of a large casserole dish and spread to coat.

8. One by one, dip tortillas into the red chile sauce, coat both sides, and place on a plate. Fill with a spoonful of the meat mixture and a bit of shredded cheese. Roll and place seam-side down in the dish.

9. Once all tortillas are filled and arranged, pour remaining red chile sauce over the top and sprinkle with a generous layer of cheese.

10. Bake uncovered for 20 minutes at 350°F, until the cheese is melted and bubbly.

Serving tip: These enchiladas are a perfect mix of savory red chile sauce and spicy green chile filling. Serve with rice, beans, or a crisp green salad.
