Paulie’s Southwest Cowboy Beans with Hatch Green Chile
(This recipe serves 8 to 10)

Ingredients:

  • 2 lbs ground hamburger
  • 1 lb thick-cut bacon
  • 2 cans baked beans (your favorite flavor)
  • 2 cans mild chili beans
  • 1 can spicy chili beans
  • 1 jar Fresh Chile Pure Green Chile
  • 2 tablespoons Fresh Chile Sweet and Spicy Mustard
  • 1 onion, chopped
  • 3/4 cup brown sugar
  • 3/4 cup ketchup
  • 2 teaspoons vinegar

Instructions:

1. Prep the meats: In a skillet, cook the bacon until crispy. Remove and chop. In the same skillet, brown the hamburger and drain excess fat.

2. Load the slow cooker: Add the cooked hamburger and bacon to your slow cooker. Pour in all beans — baked, mild chili, and spicy chili.

3. Add bold flavor: Stir in the Fresh Chile Co. Pure Green Chile and Sweet and Spicy Mustard. Then add chopped onion, brown sugar, ketchup, and vinegar.

4. Simmer low and slow: Mix everything well. Cover and cook on low for 4 to 5 hours, allowing the flavors to blend and the sauce to thicken.

Serving tip: These beans are perfect on their own, as a side dish at a cookout, or spooned over cornbread or rice for a full meal.
