Instant Pot Green Chile Chicken and Bean Stew
(This recipe serves 4 to 6)
Ingredients:
- 1 lb chicken thighs, chopped
- 1 jar Fresh Chile Pure Hatch Green Chile
- 1 jar green chile sauce (with tomatoes, if preferred)
- 1 can pinto beans (optional)
- 2 cups chicken stock or bone broth
Instructions:
1. Sear the chicken: Set your Instant Pot to the sauté setting. Add the chopped chicken thighs and sear until browned on all sides.
2. Add remaining ingredients: Pour in the Fresh Chile Pure Hatch Green Chile, green chile sauce, pinto beans (if using), and chicken stock or bone broth.
3. Pressure cook: Place the lid on the Instant Pot and set it to seal. Select the “Soup” function and cook for 30 minutes.
4. Release and serve: Once done, quick release the pressure. Stir and serve hot with your favorite sides. Cornbread is a perfect match for this stew.
