Huevos Rancheros Burger with Hatch Chile Sauce
(This recipe serves 2)
Ingredients:
- 1/2 lb ground beef (organic grass-fed preferred)
- 2 tablespoons chorizo
- Chihuahua cheese or preferred melting cheese
- 1/4 onion, sliced and sautéed
- 2 eggs (over-easy)
- 2 tablespoons Fresh Chile Co. Red Chile Roast
- 2 tablespoons Fresh Chile Co. Pure Green Chile Roast
- 2 burger buns (sesame seed recommended)
- 1 avocado, sliced
- 1/2 cup sour cream
- 2 russet potatoes, cut into crinkle fries
- 1 tablespoon kosher salt
- 1/4 cup all-purpose flour
- 3/4 cup corn masa harina
- Salt and pepper to taste
- Garlic powder
- Butter or oil for cooking
- Fresh Chile Co. Mama’s Salsa (for dipping or garnish)
Instructions:
1. Prep the fries: Cut potatoes into crinkle fries. Rinse and soak in water for 30 minutes to remove starch. Pat dry. First fry in 275°F oil for 5 minutes. Set aside.
2. Make the burger patty: Loosely form ground beef into a patty. Season with salt, pepper, and garlic powder.
3. Form the chorizo patty: Press chorizo into a thin patty.
4. Bread the chorizo: Mix flour and masa harina (3:1 ratio) with salt. Dip chorizo patty in flour mix, then beaten egg, then back into flour mix.
5. Fry the chorizo: Heat oil to 350°F. Fry chorizo patty until golden and internal temp reaches 165°F. Set aside.
6. Sauté onions and cook egg: Cook onions in butter or oil until soft. Fry eggs over-easy. Season with salt and pepper.
7. Grill the burger patty: Cook to your preferred doneness. Top with Chihuahua cheese.
8. Finish the fries: Fry potatoes again in 350°F oil until golden brown and crispy. Sprinkle with kosher salt.
9. Assemble the burger: On the bottom bun, layer the grilled patty, chile roasts, fried chorizo, over-easy egg, and sautéed onions. Add extra chile sauce or salsa if desired. Top with bun.
10. Garnish and serve: Plate with crispy fries, avocado fan, sour cream, and a side of Fresh Chile Co. Mama’s Salsa.
Serving tip: This burger is big on bold flavor — serve with lime wedges or fresh cilantro for an extra kick.
