Hot Honey Trail Mix with Hatch Chile Kick
(This recipe makes about 4 cups)
Ingredients:
- 6 tablespoons coconut oil
- 1/2 cup Fresh Chile Co. Hot Honey
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons cinnamon
- 1 tablespoon Fresh Chile Co. Green Chile Powder
- 1 cup pecans
- 1 cup cashews
- 1 cup slivered almonds
- 1/2 cup sunflower seeds
- 1 cup dried cranberries
- Fresh Chile Co. Hatch Chile Spice Blend (to taste)
Instructions:
1. Preheat oven to 275°F.
2. Line a baking sheet with parchment paper.
3. In a saucepan over low heat, warm the coconut oil, Fresh Chile Co. Hot Honey, vanilla, and cinnamon until melted and smooth.
4. Stir in pecans, cashews, almonds, sunflower seeds, cranberries, and Fresh Chile Co. Green Chile Powder. Mix until evenly coated.
5. Spread the mixture evenly on the prepared baking sheet.
6. Bake for 30 minutes, stirring every 10 minutes for even toasting.
7. Remove from oven and immediately sprinkle Fresh Chile Co. Hatch Chile Spice Blend over the top while warm.
8. Let cool completely before storing in an airtight container.
Serving tip: This trail mix is perfect for snacking, hiking, gifting, or topping yogurt and oatmeal. It’s sweet, spicy, crunchy, and totally addicting.
