Homemade Taco Seasoning and Green Chile Corn Tortillas
(This recipe makes enough seasoning for several meals and about 10 small tortillas)
Taco Seasoning Blend
Ingredients:
- 3 tablespoons cayenne pepper
- 4 tablespoons ground cumin
- 3 teaspoons sea salt
- 3 teaspoons ground black pepper
- 3 teaspoons hot ground paprika
- 2 teaspoons garlic powder
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon dried oregano
Instructions:
1. Mix the spices: Combine all the ingredients in a bowl and stir until evenly mixed.
2. Store for later: Keep in an airtight container for future taco nights.
Green Chile Taco Meat
Ingredients:
- Thinly sliced top round beef
- 1 white onion, chopped
- 1 to 2 tablespoons homemade taco seasoning (to taste)
- 1/2 cup beef broth
- 2 to 3 tablespoons Fresh Chile Co. Red Jalapeño Roast
Instructions:
1. Add beef broth, chopped onion, taco seasoning, and Fresh Chile Co. Red Jalapeño Roast to a saucepan.
2. Stir in the sliced beef and simmer on low heat for about 2 hours, until the meat is very tender and full of flavor.
Homemade Green Chile Corn Tortillas
Ingredients:
- 2 cups tortilla-style masa (not tamale-style)
- 2 cups very warm water
- Optional: small spoonful of Fresh Chile Co. Green Chile for extra flavor
Instructions:
1. Make the dough: In a mixing bowl, combine the masa and warm water. Knead with your hands for several minutes until the dough is smooth. Adjust with small amounts of water or masa if needed.
2. Shape the tortillas: Roll dough into golf ball-sized portions. Use a tortilla press with parchment paper to flatten into 6-inch rounds.
3. Cook: Heat a cast iron pan over high heat. Cook each tortilla for 30 seconds to 1 minute per side, flipping once. Look for light toasting and small air bubbles.
4.Serve warm: Enjoy fresh or refrigerate leftovers.
