Hatched Up Southwestern Chicken Stuffed Shells
(This recipe serves 6 to 8)

Ingredients:

  • 4 cups diced rotisserie chicken
  • 1 cup Fresh Chile Co. Pure Green Chile
  • 1 jar Fresh Chile Co. Red Chile Roast, divided
  • 1/2 cup salsa
  • 1 can corn, drained
  • 1 can black beans, drained and rinsed
  • 1 small can sliced black olives
  • 1 (8 oz) package cream cheese, softened and cubed
  • 2 teaspoons Fresh Chile Co. Posole Seasoning
  • 1 box jumbo pasta shells
  • 2 cups shredded Mexican cheese blend

Instructions:

1. Cook the pasta shells for 2 minutes less than the time listed on the box. Drain and rinse under cold water, then lay out on a baking sheet to cool.

2. In a large skillet, heat 1 tablespoon oil over medium heat. Add the diced chicken and Posole seasoning.

3. Once the chicken is warmed through, stir in the cubed cream cheese and Fresh Chile Co. Pure Green Chile. Cook until the cream cheese is melted and the mixture is smooth.

4. Add the corn, black beans, and sliced black olives to the skillet. Stir until everything is well combined, then remove from heat.

5. In a 9x13-inch baking dish, pour 1/2 cup of Fresh Chile Co. Red Chile Roast and the salsa. Spread to coat the bottom of the dish evenly.

6. Fill each pasta shell with the chicken and veggie mixture using a tablespoon. Place the filled shells in rows inside the baking dish.

7. Spoon the remaining Red Chile Roast over the top of each stuffed shell, using the rest of the jar.

8. Sprinkle the shredded Mexican cheese evenly over the top.

9. Spray a piece of foil with cooking spray and cover the dish tightly. Bake at 375°F for 25 minutes.

10. Remove the foil and bake for an additional 7 to 10 minutes, until the cheese is melted and bubbling.

11. Let the dish sit for 5 minutes before serving.

Serving tip: These stuffed shells are rich, creamy, and full of Hatch chile flavor. Serve with a side salad or chips and salsa for a full meal.
