Hatched Up Pot Roast with Hatch Green Chile
(This recipe serves 4 to 6)
Ingredients:
- 2 lb chuck roast
- 2 tablespoons butter (for browning)
- 1 cup carrots, chopped
- 1 cup onion, chopped
- 1 cup celery, chopped
- 1/2 green bell pepper, chopped
- 3 to 4 garlic cloves
- 1/2 cup Fresh Chile Medium Green Chile
- 1 cup leftover coffee
- 1 cup beef broth
- 1 tablespoon green chile seasoning
- Coarse salt to taste
Instructions:
1. Brown the roast: In a skillet, melt butter and brown the chuck roast on all sides to seal in flavor.
2. Prepare the vegetables: Combine chopped carrots, onions, celery, green bell pepper, and garlic. Mix in 1/2 cup of Fresh Chile Medium Green Chile
3. Layer in the slow cooker: Pour leftover coffee and beef broth into the bottom of the slow cooker. Add the vegetable mixture and stir. Place the browned roast on top.
4. Season and cook: Sprinkle green chile seasoning and coarse salt over the roast. Cover and cook on low for 8 hours until the meat is tender and falls apart easily.
5. Serve: Spoon the veggies and roast onto a plate, and don't forget to ladle on some of the rich, flavorful gravy that forms in the slow cooker.
Serving tip: Serve with mashed potatoes, rice, or crusty bread to soak up every drop of that Hatch chile-infused gravy.
