Hatch Green Chile Meatloaf
(This recipe serves 6 to 8)
Ingredients:
- 3 lbs ground beef
- 1 jar Fresh Chile Pure Green Chile (choose your heat level)
- 1.5 cups corn kernels
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 2.5 cups crushed Parm crisps or bread crumbs (Parm crisps used for low carb option)
- 1.5 cups grated Parmesan cheese
- 2 tablespoons Fresh Chile Hatch Spice Blend
- 1.5 tablespoons ground coriander
- 1.5 tablespoons dried oregano
- 1.5 teaspoons garlic powder
- 1.5 teaspoons onion powder
- 3 eggs
- (No added salt due to saltiness of the Parm crisps)
For the topping:
- 1/2 jar Fresh Chile Mild Sun Dried Red Chile Sauce
- 1 (8 oz) can tomato sauce
- 2 tablespoons Worcestershire sauce
Instructions:
1. Preheat oven: Set your oven to 375°F.
2. Mix the meatloaf base: In a large mixing bowl, combine the ground beef, Pure Green Chile, corn, bell peppers, crushed Parm crisps or bread crumbs, Parmesan, Hatch Spice Blend, coriander, oregano, garlic powder, onion powder, and eggs. Mix by hand or with a spoon until evenly combined.
3. Form the loaf: Transfer the mixture into a large loaf pan or shape into a loaf on a baking sheet lined with parchment paper.
4. Add the topping: In a separate bowl, mix the Sun Dried Red Chile Sauce, tomato sauce, and Worcestershire. Spread this sauce evenly over the top of the meatloaf.
5. Bake: Bake uncovered for about 1 hour or until the internal temperature reaches 160°F.
6. Rest and serve: Let the meatloaf rest for 10 minutes before slicing. Serve hot with your favorite sides.
