Hatch Green Chile Mac Meal Prep

This recipe brings together classic comfort food and authentic New Mexico flavor. Ground beef, onion, pasta, and spices come together with our Pure Green Chile for a rich and satisfying Hatch-style meal that’s perfect for dinner or weekly meal prep.

Ingredients

  • 2 lbs lean ground beef
  • 1 chopped onion (Hatch onion if available)
  • 1 cup dry pasta (your choice)
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • ¼ to ½ tsp cumin (to taste)
  • ¾ jar Pure Hatch Green Chile (medium or hot)
  • 1 can diced tomatoes (fire-roasted recommended)
  • ½ cup beef broth (adjust for consistency)
  • Optional: shredded cheddar cheese for garnish

Instructions

  1. Brown ground beef in a large skillet until fully cooked. Add chopped onion and sauté until translucent.
  2. Season with salt, pepper, garlic powder, onion powder, oregano, and cumin. Stir well to combine.
  3. Cook pasta separately until al dente. Drain and set aside.
  4. Add diced tomatoes, Pure Hatch Green Chile, and beef broth to the meat mixture. Stir and simmer for 15–20 minutes.
  5. Fold in cooked pasta and allow the dish to rest for a few minutes before serving.
  6. Top with shredded cheddar cheese, if desired, and enjoy.
