Hatch Green Chile Lobster Enchiladas

(This recipe makes 2 large enchiladas, serves 2)


Ingredients:

For the lobster:
3 lobster tails, steamed and chopped

Green Chile Cream Sauce:
1 jar Pure Hatch Green Chile (we used hot)
½ jar heavy cream
1 clove garlic, smashed
1 teaspoon Hatch Green Chile Spice Blend
Salt to taste

Other ingredients:
4 Fresh Chile Co. Green Chile Corn Tortillas
1 cup shredded medium cheddar cheese
1 cup shredded white cheese
¼ cup finely diced white onion (optional)
Sour cream for topping (optional)

 

Instructions:

Steam the lobster:
Steam lobster tails for 8 to 10 minutes depending on size. Remove from heat, let cool slightly, then chop into bite-sized pieces.
Prepare the Green Chile Cream Sauce:
In a saucepan over low heat, combine the jar of pureed Hatch Green Chile and heavy cream. Stir in the garlic, Hatch Green Chile Spice Blend, and a pinch of salt. Keep the heat low and stir often until warm and smooth. Do not let it boil.
Warm the tortillas:
Lightly toast the green chile corn tortillas on a skillet until pliable and lightly golden.
Assemble the enchiladas:
In a baking dish, spoon a bit of the sauce on the bottom. Layer a tortilla, a spoonful of sauce, chopped lobster, and a sprinkle of both cheeses. Repeat with a second tortilla and more filling. Top with sauce, cheese, and diced onion if using.
Broil to finish:
Place the enchiladas under the broiler for 4 to 5 minutes, or until the cheese is bubbling and lightly browned. Keep a close eye to avoid burning.
Serve hot:
Top with a spoonful of sour cream if desired and serve with your favorite slaw or side of beans.
