Green Chile Potato Soup with Bacon and Cheddar
(This recipe serves 4 to 6)

Ingredients:

  • 1/2 pound chopped bacon
  • 2 tablespoons unsalted butter
  • 2 small leeks, cleaned and sliced
  • 2 pounds potatoes, diced
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon Fresh Chile Co. Posole Seasoning
  • 1 teaspoon salt
  • 1/4 teaspoon freshly cracked black pepper
  • 1/4 cup Fresh Chile Co. Pure Green Chile (choose your preferred heat level)
  • 1 cup shredded cheddar cheese  

Optional toppings:

  • Extra cheddar cheese
  • Cilantro
  • Sour cream
  • Diced jalapeños  

Instructions:

1. In a Dutch oven, fry chopped bacon until crispy. Remove and drain on paper towels. Reserve the bacon fat in the pot.

2. Add butter and sliced leeks to the hot bacon fat. Sauté until leeks are soft and fragrant.

3. Stir in the Fresh Chile Co. Pure Green Chile, Posole Seasoning, salt, pepper, diced potatoes, and chicken broth.

4. Bring to a boil, then cover and simmer for about 10 minutes, or until potatoes are fork-tender.

5. Add shredded cheddar cheese and heavy cream. Cook for another 2 minutes, stirring until cheese is melted.

6. Use an immersion blender to blend the soup to your preferred consistency. Blend briefly to thicken the soup while keeping some potato chunks for texture.

7. Serve hot and top with reserved bacon bits, extra cheese, chopped cilantro, sour cream, or diced jalapeños.

Serving tip: This soup is hearty and rich with creamy potatoes, smoky bacon, and just the right Hatch chile heat. It’s perfect for chilly nights or comfort food cravings.
