Green Chile Gravy for Tamales with Hatch Chile Flavor
(This recipe yields about 3 cups of sauce)
Ingredients:
- 2 cups Fresh Chile Co. X-Hot Green Chile
- 1 large yellow onion, chopped
- 5 cloves garlic, chopped
- 1 tablespoon crushed Mexican oregano
- 1 teaspoon cumin
- 1/2 tablespoon Fresh Chile Co. Green Chile Powder
- Garlic salt (or regular salt) to taste
- 1 tablespoon lard (or oil of choice)
- 2 tablespoons flour
- Enough chicken stock or bone broth to cover
Instructions:
1. In a large pan, melt lard over medium heat and sauté chopped onion until soft and translucent.
2. Add crushed Mexican oregano while the onions cook to release aroma.
3. Stir in the flour and mix well to form a light roux.
4. Add Fresh Chile Co. X-Hot Green Chile and the chopped garlic. Stir to combine.
5. Pour in enough chicken stock or bone broth to just cover the mixture. Stir well.
6. Add cumin, Fresh Chile Co. Green Chile Powder, and garlic salt to taste.
7. Bring the mixture to a strong boil, then reduce the heat to low.
8. Simmer uncovered as long as you can, stirring occasionally and tasting to adjust seasoning if needed.
Serving tip: This green chile "gravy" is perfect for topping tamales, burritos, eggs, potatoes — basically anything that could use a hit of Hatch heat and flavor.
