Green Chile Cheese Stuffed Shells

Green Chile Cheese Stuffed Shells
(This recipe serves 6 to 8)

Ingredients:

  • 1 box jumbo pasta shells
  • 32 oz ricotta cheese
  • 8 oz garden vegetable cream cheese
  • 2 cups shredded mozzarella cheese
  • 2 jars Fresh Chile Co. Green Chile
  • 2 cups cooked chicken, shredded or chopped
  • 1 can diced tomatoes with green chiles (about 10 oz)
  • Salt and pepper to taste  

Instructions:

1. Preheat oven to 350°F.

2. Cook the pasta shells according to the box directions until al dente. Drain, rinse with cool water, and set aside.

3. In a large bowl, mix the ricotta, cream cheese, mozzarella, and both jars of Fresh Chile Co. Green Chile. Stir until well combined.

4. In a skillet, cook the chicken with the can of diced tomatoes and green chiles. Season with salt and pepper to taste. Once cooked through, remove from heat.

5. Fill each pasta shell with the green chile cheese mixture. Place stuffed shells into a greased 9x13-inch baking dish.

6. Spoon the cooked chicken and tomato mixture evenly over the stuffed shells.

7. Bake uncovered at 350°F for 45 minutes. During the last 10 minutes, leave uncovered to allow the top to brown slightly.

Serving tip: These stuffed shells are creamy, cheesy, and full of Hatch green chile flavor. Serve with a crisp green salad or garlic bread.
