We talk a lot about Hatch Green Chile, and rightfully so. But there’s another gem grown in this valley that deserves its moment in the skillet: NuMex Sweet Onions.

Earlier this summer, we visited the Adams family farm (yes, that’s Adams with one d). Six generations deep, they’ve been growing onions and chile here in Hatch, New Mexico, long before Fresh Chile was even a seed of an idea. And that day? We were invited into their kitchen. Literally.

The Scene

Scotty's mom, Genevieve Adams, welcomed us with a warm smile and a bowl full of sliced sweet yellow onions. What came next was pure comfort food magic, an onion ring recipe passed down through generations, made from the very onions they pull from the soil each morning.

The Recipe: Genevieve’s Famous Onion Rings

This isn’t a complicated or trendy dish. It’s honest food. Food that brings people together and reminds you why family matters.

Ingredients:

  • 4 NuMex Sweet Onions (sliced into ¼ inch rings)
  • 4 eggs, beaten
  • 4 cups whole milk
  • 4 cups all-purpose flour
  • ½ cup cornstarch
  • 2 teaspoons baking soda
  • 1 tablespoon salt

Instructions:

  1. Slice your onions and keep the rings whole. Genevieve says if they’re not whole, they’re not onion rings.
  2. Beat the eggs and mix with milk in one bowl.
  3. In another bowl, stir together flour, cornstarch, baking soda, and salt.
  4. Dip the rings into the wet mix, then coat in dry mix.
  5. Fry in hot oil (about 350°F) for 2 to 3 minutes or until golden brown.
  6. Drain on paper towels and serve immediately.

Feeds 15 to 20 hungry folks. Or just one die-hard onion lover. We won’t judge.
