Fresh Rainbow Trout with Hatch Red & Green Chile Powders
(This recipe serves 2)

Ingredients:

  • 2 fresh rainbow trout fillets
  • 2 tablespoons butter
  • Fresh cracked black pepper
  • Kosher salt
  • Granulated garlic
  • Onion powder
  • Parsley flakes
  • Fresh Chile Co. Red Chile Powder
  • Fresh Chile Co. Green Chile Powder
  • Aluminum foil (for tenting)  

Instructions:

1. In a skillet over medium-high heat, melt butter.

2. Pat the rainbow trout dry and season the flesh side with cracked black pepper, kosher salt, granulated garlic, onion powder, parsley flakes, and both Fresh Chile Co. Red and Green Chile Powders.

3. Place the fish skin side down into the hot skillet. Do not flip the fish.

4. Cover the pan loosely with a tent of aluminum foil. This allows the top of the fish to steam gently while the skin crisps on the bottom.

5. Cook until the flesh is opaque and flakes easily with a fork. The skin should be crispy and golden.

Serving tip: Serve hot with lemon wedges, roasted vegetables, or rice for a fresh, flavor-packed meal.
