Southwest Chicken Spaghetti with Hatch Red Chile Sauce
(This recipe serves 6 to 8)

Ingredients:

8 oz spaghetti noodles
3 cups cooked chicken (breasts or thighs)
1 onion, diced
6 oz roasted green chiles, chopped
1 can (14.5 oz) fire roasted tomatoes
2 tablespoons olive oil
4 cloves garlic, minced
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups heavy cream
1/2 cup chicken broth
1 tablespoon Fresh Chile Co. Posole Seasoning
1/4 cup Fresh Chile Co. Red Chile Sauce (choose your preferred heat level)
2 cups shredded Monterey Jack cheese
2 cups shredded sharp cheddar cheese
1/2 cup grated Parmesan cheese

Instructions:

1. Preheat oven to 375°F.

2. Cook spaghetti noodles according to package directions, but stop just short of al dente. Drain and set aside.

3. In a medium saucepan, heat olive oil over medium heat. Sauté diced onion for 2 minutes, then add garlic and cook for 1 more minute. Be careful not to burn the garlic. Remove mixture and set aside.

4. In the same pan, melt butter over medium-low heat. Add flour and whisk to make a roux.

5. Slowly add heavy cream and chicken broth to the roux. Stir constantly and cook until the sauce thickens.

6. Add 1 cup of Monterey Jack cheese and 1 cup of cheddar to the sauce. Stir until melted and smooth.

7. Remove sauce from heat. Stir in fire roasted tomatoes, chopped green chiles, Fresh Chile Co. Posole Seasoning, Fresh Chile Co. Red Chile Sauce, and the onion/garlic mixture.

8. In a large mixing bowl, combine cooked spaghetti, cooked chicken, the creamy sauce, and the remaining Monterey Jack and cheddar cheeses. Mix until everything is evenly coated.

9. Spray a 13x9 inch baking dish with cooking spray. Pour the spaghetti mixture into the dish and spread evenly.

10. Top with grated Parmesan cheese.

11. Bake at 375°F for 25 to 30 minutes, or until bubbly and the top is lightly browned.

Serving tip: This spicy, creamy spaghetti dish is delicious on its own or with a simple side salad. Great for a cozy family dinner or potluck.
