Dutch Oven Bread with Hatch Green Chile and Cheddar
(This recipe makes 1 loaf)
Ingredients:
- 3 cups all-purpose flour
- 1 teaspoon dry yeast
- 1 teaspoon good salt
- 1/2 cup grated cheddar cheese
- 1 (4 oz) can chopped Hatch Green Chiles
- 1 1/4 cups warm water (105°F to 115°F)
Instructions:
1. In a large mixing bowl, whisk together the flour, yeast, and salt.
2. Stir in the grated cheddar and chopped Hatch Green Chiles until evenly distributed.
3. Add 1 cup of the warm water and begin mixing with a rubber spatula.
4. Add the remaining 1/4 cup water (you might need a bit more) and mix until a shaggy dough forms and all the flour is incorporated.
5. Cover the bowl with plastic wrap or a produce bag and let the dough rest at room temperature for 8 hours or overnight. It should double in size.
6. After resting, use a floured rubber spatula to gently scrape the dough down from the sides and turn it out onto a floured piece of parchment paper (about 12x16 inches).
7. Flour the top of the dough, then fold it in on itself 5 to 6 times. Shape into a round or loaf form and cover to rest for another hour.
8. Before baking, use a very sharp knife or bread lame to score slits on top of the loaf. This helps the bread expand properly in the oven.
9. While the dough rests, place your Dutch oven (with lid) into the oven and preheat to 425°F.
10. Once the oven is ready, remove the Dutch oven lid and carefully transfer the dough with the parchment paper into the pot.
11. Replace the lid and bake for 30 minutes.
12. Remove the lid and continue baking for another 10 to 12 minutes until golden brown and crusty.
13. Remove the bread and let it cool on a wire rack before slicing.
Serving tip: This bread is packed with Hatch green chile flavor and melty cheddar cheese — perfect warm with butter, or alongside soups and stews.
