Double Crust Peach and Green Chile Cobbler
(This recipe serves 6 to 8)

Ingredients:

Peach Filling:
4 tablespoons unsalted butter
1/2 cup sugar (plus extra for sprinkling)
1/2 cup water
1/4 teaspoon freshly grated nutmeg
1/4 cup Fresh Chile Co. Green Chile (medium recommended)
Pinch of salt
3 pounds frozen sliced peaches, thawed and drained
3 tablespoons all-purpose flour
2 tablespoons heavy cream

Crust:
2 rolls Pillsbury refrigerated pie crust

Instructions:

1. In a large high-sided sauté pan, melt the butter over medium heat.

2. Add sugar and water. Stir until the sugar is completely dissolved.

3. Stir in nutmeg, salt, thawed peaches, and flour. Cook for 5 minutes, stirring gently.

4. Preheat oven to 375°F.

5. Butter a 9-inch square baking dish. Using a slotted spoon, place half of the peach mixture into the dish to minimize excess liquid.

6. Roll out one pie crust and place it over the peach layer. Trim edges if needed.

7. Place the baking dish on a sheet pan and bake for 20 minutes or until the crust is light golden brown.

8. Remove from oven. Add the remaining peach mixture over the baked crust. Spoon in the Fresh Chile Co. Green Chile evenly across the fruit layer.

9. Cover with the second pie crust. Press edges to seal. Brush the top with heavy cream and sprinkle with sugar.

10. Return to the oven and bake until the top crust is golden and juices are bubbling, about 25 to 30 minutes.

11. Let cool for at least 30 minutes before slicing and serving.

Serving tip: This cobbler is delicious on its own or served warm with a scoop of vanilla ice cream. The Hatch green chile adds a subtle savory kick to the sweet peaches.
