Crockpot Anasazi Beans, Ham, Sausage and Vegetable Soup

Crockpot Anasazi Beans, Ham, Sausage and Vegetable Soup
(This recipe makes a large batch. Great for freezing leftovers.)

Ingredients:

  • 1 lb Anasazi beans
  • 1 lb ham, cut into cubes
  • 12 oz smoked sausage, sliced
  • 1 large sweet onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons cumin
  • 2 teaspoons Hatch Red Chile Powder
  • 2 teaspoons Hatch Red Spice Blend
  • 1 cup roasted and chopped Hatch Green Chile
  • 2 teaspoons kosher salt
  • 1 tablespoon Hatch Table Seasoning
  • 1 (28 oz) can fire-roasted tomatoes
  • 1 jar Sun Dried Sauce
  • 1 cup chicken broth (poured into the empty Sun Dried Sauce jar to get all the flavor)
  • 6 cups chicken broth, plus more if needed
  • 1 tablespoon olive oil
  • 1 (16 oz) bag baby carrots, cut in half
  • 6 stalks celery, chopped (use the leafy tops too)

Instructions:

1. Sort and soak the beans: Look through the Anasazi beans and remove any stones or debris. Rinse them well in cool water, then soak overnight for about 8 hours.

2. Sauté the base: In a skillet, heat the olive oil and sauté the onions, garlic, ham, and smoked sausage until the onions are soft and everything is browned and fragrant.

3. Build the soup: Add the soaked beans to the crockpot. Layer in all the remaining ingredients — carrots, celery, fire-roasted tomatoes, both broths (including what you rinsed from the Sun Dried Sauce jar), Fresh Chile Co. Hatch Green Chile, Red Chile Powder, Red Spice Blend, Table Seasoning, cumin, and salt.

4. Cook: Cover and cook on high for 6 hours. Stir occasionally if you can. Add a little more broth if the soup becomes too thick.

5. Serve: Spoon the soup into bowls. Top with shredded Monterey Jack cheese and a sprinkle of Fresh Chile Co. Red Spice Blend.

Optional garnishes:

  • Monterey Jack cheese, shredded
  • Extra Fresh Chile Co. Red Spice Blend
  • Chopped green onions or fresh cilantro

Helpful tip: This recipe makes a big batch. You can freeze portions for easy future meals. If you're cooking for fewer people, feel free to cut the recipe in half.
