How to Make Red and Green Chile Enchiladas

Ingredients

Red Enchilada Sauce:

Green Enchilada Sauce:

Casserole:

  • 2 rotisserie chickens, chopped (or 4–5 grilled chicken breasts)
  • 2–3 pounds cheese (Asadero, Muenster, or Monterey Jack recommended)
  • Corn or flour tortillas (approx. 2 packages of 30)
  • Cooking spray

Optional Toppings:

  • Sour cream
  • Avocado or guacamole
  • Fried eggs or Mexican crema

Steps

  1. Prepare the pan: Spray a 9x13 baking dish with oil.
  2. Layer the casserole:
    1. Sauce → Tortillas → Chicken → Cheese
    2. Repeat twice, ending with tortillas → sauce → cheese.
  3. Bake: Preheat oven to 375–400°F. Bake for 25 to 30 minutes until hot and bubbly in the center. Broil for 2–3 minutes at the end to achieve a golden-brown top.
  4. Serve: Add sour cream, avocado, or a fried egg if desired.

How to Cook Beans (Optional)

  1. Wash beans thoroughly.
  2. Place in an Instant Pot with at least an inch of water.
  3. Add 1/2–1 tsp minced garlic and a piece of raw bacon for flavor.
  4. Cook on high pressure for 30 - 40 minutes (depending on texture preference). Let it naturally release for 15–45 minutes.
  5. Drain and rinse again before using.
