Chilaquiles
Ingredients:
12 Corn Tortillas cut into 1inch triangles
1 Cup Monterey Jack or Cheddar Cheese
1 Cup Mama’s Salsa
½ Cup Cilantro, chopped
1.5 Tbsp Oil
Adobo seasoning (optional)
Instructions:
Heat 1 Tbsp oil in a large skillet and add in the cut corn tortillas.
We like to sprinkle some Adobo on top of them for a little bit of extra flavor.
Cook over Medium-High heat until getting crispy.
Turn heat to medium add ½ tbsp of oil in and the Mama’s Salsa.
Mix the tortillas and the mama’s salsa well to coat them thoroughly and continue to cook for 2-3 more minutes.
Add in cilantro and cheese and warm until cheese is melted.
We like to add plenty more Mama’s on top.
Also, many people enjoy this dish served with an over-easy egg or two!
