Calabacitas with a Twist Featuring Hatch Green Chile
(This recipe serves 4 to 6)

Ingredients:

  • 1 package kielbasa sausage, sliced
  • 2 zucchinis, sliced and halved
  • 1/2 onion, sliced
  • 6 small assorted peppers, sliced
  • Fresh Chile Co. Frozen Chopped Green Chile (amount to taste)
  • Fresh Chile Co. Jalapeño Roast (adjust for desired heat)
  • Colby Jack cheese, shredded (or cheese of your choice)
  • Cooking oil for sautéing
  • Salt and pepper to taste  

Instructions:

1. Heat oil in a skillet and sauté the vegetables with salt and pepper. Sauté the peppers and onions together, and the zucchini separately. Once tender, transfer all vegetables to a separate dish and set aside.

2. In the same skillet, cook the sliced kielbasa sausage until browned.

3. Add the cooked vegetables back into the skillet with the sausage. Stir in Fresh Chile Co. Green Chile and Jalapeño Roast to your preferred spice level.

4. Cover the skillet and let everything meld for about 5 minutes on low heat.

5. Sprinkle with shredded Colby Jack cheese and stir until the cheese is melted and evenly combined.

Serving tip: This dish is great in a tortilla, over your favorite rice, or served all on its own.
