Bacon Green Chile Cornbread with Hatch Heat
(This recipe makes one standard pan or 8–10 individual servings)
Ingredients:
- 1 package buttermilk cornbread mix (prepared per package instructions, minus the oil)
- 1 lb bacon, chopped
- 1/2 jar Fresh Chile Co. Pure Green Chile (Hot recommended)
Instructions:
1. Prepare the cornbread batter according to the mix instructions, but do not add oil.
2. In a skillet, fry chopped bacon until crispy. Do not discard the bacon grease.
3. Add the cooked bacon and all the bacon grease directly into the cornbread batter. Stir to combine.
4. Mix in 1/2 jar of Fresh Chile Co. Pure Green Chile (adjust amount to taste).
5. Pour the batter into a greased baking dish or individual muffin tins.
6. Bake according to the cornbread mix instructions until golden brown and a toothpick comes out clean.
Serving tip: This cornbread is savory, spicy, and rich with Hatch chile and bacon flavor. Serve it with chili, soup, or as a standout side at any meal.
