Hatch Chile Meatloaf
2.5-3lb ground beef
1 cup medium heat FCC Red & Green Blend
Two medium eggs
1 cup grated Parmesan cheese
1/2 cup grated cheddar cheese
1/2 cup grated Monterrey Jack cheese
1 tbsp ground cumin
1 tbsp chipotle chile powder
1 tsp FCC Hatch Green Chile Powder
1 tsp Grilling Gods Salt of the Gods
Mix ingredients adding 1/2 cup of FCC Red & Green Blend.
Bake at 350 for one hour.
Top with remaining 1/2 cup FCC Red & Green Blend. Continue to bake for 15 additional minutes.
Top with 1/2 cup shredded Monterrey Jack cheese. Bake 5-10 additional minutes until melted and slightly browned.
