Pure Hatch Green Chile Sauce

This is where it all started. The very first green chile sauce Randy and Carol manufactured, and it carries official Hatch Chile Farmers certification, meaning it's grown and processed in the Hatch region. It's hand-picked, flame-roasted, chopped into half-inch pieces, slow-cooked, and bottled. A hot heat level with the smoky, freshly roasted flavor that put Fresh Chile on the map.

Red & Green Blend ("Christmas")

Here in New Mexico, ordering your chile "Christmas" means half red and half green, and that's exactly what this blend delivers. It captures the chile as it transitions from green to red in the field, giving you that classic green chile flavor alongside the natural sweetness of ripened red chile. It has a medium heat level and, according to Chris, it's his favorite in the whole lineup.

Fresh Red Hatch Chile Sauce

This one goes back generations. It's Randy's father's recipe, made simply with fresh Hatch chile straight from the field, and it's been a family favorite around the Sunday lunch table for years.

Roasted Hatch Green Chile Sauce

Chris fought hard to keep this one on the shelf. The idea was to take the fresh red chile recipe and apply it to green chile, but the first attempts boiled the chile instead of roasting it, which didn't land well. Once the process switched to roasting, everything changed.

Made with lime, salt, and garlic, it's a versatile base sauce with a medium heat level. Use it for pozole, enchiladas, stew, tacos, or as a starting point for your own proteins and flavors.

575 Hatch Chile Sauce

Named after the area code for Hatch, New Mexico, 575 was born out of Randy and Chris's old restaurant and winery, where it was first served alongside smoked ribs and brisket.

This is the restaurant-style version, kicked up with oregano and cumin for a thicker, well-seasoned sauce with plenty of New Mexico character. As Chris puts it, this isn't Tex-Mex. It's New Mex. It's also become Fresh Chile's number one overall best seller.

575 Green Taco Sauce

As 575 took off, the lineup grew to include this crowd-pleasing taco sauce. It starts with the roasted green chile base and adds avocado oil, lime juice, onion, garlic, cilantro, a vegan beef-style base, and salt for a thick, savory flavor that works especially well on tacos. It's also available in a red version.
