The Year Big Jim Sold Out Before We Ever Opened the Doors

Hey guys, Chris here from Fresh Chile, coming to you from the 575.

I've been doing this a long time, and I have never had to sit down and write this one before.

Big Jim is sold out. Sold out, baby. And here's the wild part. We never even opened it up to the public. Pre-orders alone cleared out every single bin the fields could give us. Before the general sale ever started.

What happened out here

This season has been WILD. Hot, then thunderstorms, then rain, then humid. And I mean HUMID. If you know New Mexico, you know that's not us. We're dry heat people out here in the 575. This year the weather flipped on us week to week and nobody, and I mean nobody, could predict what was coming next. And it's only July. We're not even in full swing yet. The fields felt every bit of it.

I was standing right there when the trucks rolled out. Followed them all the way to the scale. Filmed the whole thing myself. We had a quota for 160 more bins this season and nature looked at that quota and said no.

You know, Randy prays over this harvest every single season. And he always ends it the same way. Lord willing. I must have heard him say it a hundred times. This year we found out exactly what that prayer means.

Think what Napa is to wine, that's what Hatch is to chile, OK? And just like a vineyard, some years the land humbles you. This is one of those years. You plan, you plant, you pray. The 575 decides the rest.

If you pre-ordered, you're covered

I want you to hear this part loud and clear. Every single pre-order is safe. We pulled enough out of the fields to honor every jar, and those chiles are rolling through the roasters right now. Handpicked, roasted, chopped into those thick meaty one inch pieces, and headed your way.

If you missed it

I'm sorry. I truly am. But listen to me, the harvest is NOT over. The fields are still rolling, and I want to point you to two things while they're still here.

575 Sandia Select. Hot, bold, small batch. Still available. And after what just happened with Big Jim, I'm not making any promises about how long that lasts.

And our number one best seller, Pure Hatch Green Chile. This is the one. Coming out of the fields RIGHT NOW. Fresh crop, flame roasted, slow cooked in the kettles with a little garlic, a little lime, a little salt, and shipped to your door within 24 to 48 hours of bottling. Can Frito-Lay do that? I don't think so.

Big Jim taught us all a lesson this week. When it's gone, it's gone.
