Big Jim Hatch Green Chile: Field to Table
Big Jim chiles are picked by hand, one bucket at a time, because timing matters more than speed. From there, bins get loaded onto flatbeds and driven straight to the roaster, where open flame gives the chile its signature char and smoky depth. What comes out gets blended down, filled into jars, boxed up, and shelved in the warehouse until it's ready to ship.
From the Field
Harvest crews move down the rows filling buckets by hand, then hauling them overhead to the bins waiting at the field's edge. It's slow, deliberate work, the only way to make sure every Big Jim in the bin is actually ready.
The Roast
This is the step people recognize even without seeing it up close: chile tumbling through open flame, skins blistering in seconds. It's what separates real Hatch green chile from anything that started in a can.
Jar to Warehouse
Once roasted and blended, the chile moves down the fill line, gets capped and labeled, and lands on warehouse shelves stacked case by case, the quiet middle step between the field and your kitchen.
