I’m Randy, founder of The Fresh Chile Company, and this new series, Fresh Chile Cookin’, is something close to my heart. It began years ago in my father’s kitchen where he made red chile that didn’t give him heartburn. We picked the chile fresh, straight from the field, while it was still crisp and bright. That small decision turned into a family tradition and, eventually, into a business built on flavor, heritage, and Hatch-grown chile.
Today, we still cook with those same roots in mind. This series invites you into our kitchen to see how we do it.
