Ingredients:

  • 1 box Macaroni
  • 1 cup plain nonfat yogurt
  • 5 Roma Tomatoes, roughly chopped
  • 2 green onions, chopped
  • 1 cup halved kalamata olives
  • 2 garlic clove, minced
  • 1 tsp black pepper
  • 1 tbsp lime juice
  • ¼ cup cilantro
  • 1 tsp avocado oil
  • ½ cup Monterrey Cheese
  • 2 tbsp Hatch Chile Dijon Mustard
  • 1 tsp Hatch Red Chile Spice Blend
  • 1 cup of Hatch Jalapeño Roast SauceGreen or Red

Instructions:

1. Cook Pasta

Cook pasta as directed on the package. Rinse with cold water and drain.

2. Mix Ingredients

In a large bowl, mix the remaining ingredients.

3. Add Pasta

Add pasta and toss to coat.

4. Refrigerate

Cover and refrigerate until chilled. Serve and enjoy!
