Jenna's Cherry Hatch Red Chile Roast Jelly Brownies | Fresh Chile Cookin' with Carol

Join Jenna and Carol in the kitchen for a sweet treat with a New Mexico twist. These brownies are a crowd-pleaser, using a simple secret ingredient to take a standard mix to the next level. By substituting water with Jenna’s Cherry Hatch Red Chile Roast Jelly, you get a moist, fudgy brownie with a hint of cinnamon and mild chile heat. Ingredients

  • 3 packages triple chocolate brownie mix (we prefer the Hershey’s mix)
  • 1 1/2 cups vegetable oil
  • 6 eggs, pre-cracked
  • 3/4 cup plus 6 tablespoons Jenna’s Cherry Hatch Red Chile Roast Jelly (substituting the water amount)
  • Avocado oil for greasing the pan

Instructions

  1. Preheat your oven to 375 degrees.
  2. Grease a large baking pan with a light spray of avocado oil. Use a paper towel to wipe it around, ensuring the pan is coated without using too much oil.
  3. In a large mixing bowl, combine the three brownie mixes, vegetable oil, and the six eggs.
  4. Measure out the Jenna’s Cherry Hatch Red Chile Roast Jelly. Use this jelly to entirely replace the water called for in the original brownie mix instructions.
  5. Hand-mix the batter thoroughly until it is thick, gooey, and well-combined.
  6. Pour the batter into your prepared large pan. Spread it evenly, making sure it reaches all the corners.
  7. Lightly pat or tap the bottom of the pan on the counter. This helps release air bubbles and levels the surface for an even bake.
  8. Place the pan in the oven and bake for 39 to 42 minutes. For a large pan, checking at the 39-minute mark helps keep them chewy.
  9. Remove from the oven once a toothpick comes out clean and the edges are nicely crusty.
  10. Let the brownies cool for 5 to 10 minutes.
  11. To get perfectly clean slices, use a plastic knife dampened with a little water. This trick prevents the brownies from crumbling as you cut.

These brownies are wonderfully chewy and gooey with a unique flavor profile thanks to the cherry and cinnamon notes in the jelly. They are perfect for parties or a family treat. Eat more chile!
