Creamy, super cheesy, and finished with Hatch 575 Green Chile, this macaroni and cheese is one of Jenna’s favorite meals to make. It is simple, comforting, and packed with the classic New Mexico flavor we all love.

Ingredients

  • 1 pound macaroni pasta
  • Butter for the pot rim and mixing
  • Sharp cheddar cheese, shredded
  • Cheese blend with Monterey Jack and cheddar
  • Mild cheddar cheese, finely shredded
  • Hatch 575 Green Chile, chopped, about 2 tablespoons or more to taste

Instructions

  1. Bring a pot of water to a boil. Rub butter around the inside rim of the pot to help prevent boil over.
  2. Cook macaroni until tender and drain.
  3. While the pasta is hot, add butter and stir.
  4. Add cheeses in layers, stirring quickly so everything melts smoothly.
  5. Stir in Hatch 575 Green Chile and mix well.
  6. Serve immediately or transfer to a casserole dish and bake until the top is crusty.
