A classic New Mexico breakfast burrito made with eggs, smoked ham, caramelized onions, melted cheese, and bold Hatch green chile.
In southern New Mexico, especially in Hatch, breakfast often starts with one thing: a Hatch green chile breakfast burrito.
In this episode of Fresh Chile Cookin’, Randy and Chris show how to make a classic version filled with fluffy eggs, smoked ham, caramelized onions, melted cheese, and Fresh Chile Company’s 575 Hatch Green Chile Sauce.
Red or Green?
And when you can’t decide, the answer is always Christmas — both.
Ingredients
- 3 eggs
- 1½ tablespoons heavy cream
- ½–⅔ cup diced onion
- 1 cup chopped smoked ham
- 2–3 tablespoons 575 Hatch Green Chile Sauce
- 1 tablespoon avocado oil
- 1 tablespoon butter
- Salt and pepper
- Hatch Green Chile Spice Blend (optional)
- 1 large flour tortilla
- Mexican blend shredded cheese
- Sour cream
How to Make a Hatch Green Chile Breakfast Burrito
1. Cook the onions
Heat avocado oil and butter in a heavy skillet over medium-high heat. Add the diced onions and cook until they begin to soften and lightly caramelize.
2. Add the ham
Add the chopped smoked ham to the skillet and let it brown slightly with the onions. This builds a rich savory base for the eggs.
3. Prepare the green eggs
In a bowl, whisk together the eggs, heavy cream, and 2–3 tablespoons of 575 Hatch Green Chile Sauce. The chile gives the eggs their signature green color and bold flavor.
4. Cook the eggs slowly
Pour the egg mixture into the skillet with the ham and onions. Turn the heat down low and cook slowly so the eggs stay fluffy.
Season with salt, pepper, and Hatch Green Chile Spice Blend if you have it.
5. Add the cheese
Sprinkle shredded cheese over the eggs and cover the pan. Let the cheese melt before gently stirring it through the eggs.
6. Warm the tortilla
Heat a large flour tortilla on a hot skillet until it begins to bubble and lightly brown.
7. Build the burrito
Spoon the cheesy green eggs and ham into the tortilla. Add sour cream if you like and roll it into a burrito.
Red, Green, or Christmas?
Many New Mexico restaurants will ask a simple question when you order: red or green?
Red chile has a deeper, smoky flavor, while green chile is brighter and fresh. When you choose both, it is called Christmas.
This breakfast burrito works beautifully with either one.
Final Bite
A Hatch green chile breakfast burrito is simple, hearty, and packed with flavor. Fluffy eggs, caramelized onions, smoky ham, melted cheese, and real Hatch chile come together in one of the most iconic meals in New Mexico.
Make one this weekend and see why people in Hatch have been eating burritos like this for generations.
