Creamy Hatch Green Chile Sauce for Smothered Burritos | Fresh Chile Cookin’

In this episode of Fresh Chile Cookin’, Randy shows you one of his favorite sauces that Carol makes at home. It is a creamy Hatch green chile sauce that works as an enchilada sauce, a smother sauce for burritos, and a quick way to level up an everyday meal.

What does enchilada style mean?

When a burrito is ordered enchilada style or bañado, it gets sauce poured over the top. This recipe is a creamy green chile version you can make at home in about 10 minutes.

Ingredients

  • 1 cup heavy cream
  • 1/2 jar Fresh Chile Company Pure Hatch Green Chile (use up to 1 full jar if you want more chile)
  • 1/2 can cream of mushroom soup
  • About 1 cup Mexican blend shredded cheese (about the same volume as the cream)
  • Avocado oil spray (optional, helps reduce scorching)

Tip: Fresh Chile products are packed with real chile, not watered down, so use a spatula to get every bit out of the jar.

How to Make Creamy Hatch Green Chile Sauce

1) Start low and slow

Lightly spray your pan with avocado oil. Add the heavy cream and set the heat to low. Cream can scorch fast, so keep the heat gentle.

2) Add the green chile

Stir in about half a jar of Pure Hatch Green Chile. Add more if you want a bolder chile flavor or more heat.

3) Add the cream of mushroom

Stir in half a can of cream of mushroom soup. Mix until smooth.

4) Warm the sauce while stirring often

Keep the heat as low as you can. Stir frequently as the sauce warms. You want steam, not a boil.

5) Melt the cheese into the sauce

Once the sauce is warm, start adding shredded cheese so it melts smoothly. Mexican blend works great, but you can also use mild cheddar, Monterey Jack, American cheese, or asadero.

6) Serve and smother

When the cheese is melted and the sauce is creamy with chunks of green chile, you are ready. Pour it over a burrito, enchiladas, or anything you want to take up a few notches.
