Savory Sweet Potatoes
1 stick butter
1 tsp. Bacon fat
1 medium onion, diced
1 large sweet potato, 1/2" dice
1 lb. Double smoked ham, diced 1/2"
Salt and black pepper to taste
8 Fl.oz. (1/2 a jar) FCC Sun-Dried Chile, mild (or heat level of your choice)
Melt butter and bacon fat in a 10 or 12-inch skillet using medium heat. Add onion and sautée until translucent. Add sweet potato and ham and sautée until potatoes are fork-tender. Add Sun-Dried Chile and stir until heated through, then salt and pepper to taste. Serve with some Mexican crema and a few leaves of cilantro.
