New Mexico Green Chile Stew Recipe

  • 1 1/2 pound pork butt, cubed
  • Pork seasoning of your choice
  • 2 – 12.5 ounce cans diced tomatoes w/Habanera, do not drain
  • 32 oz chicken stock
  • 4 to 5 cloves garlic, minced
  • One large onion, chopped
  • 4 to 5 potatoes, peeled and diced/cubed
  • 1 Lb of Frozen Hatch Green Chile


1. Cube the Pork

Cut the pork butt into bite-size pieces, about 1” cubes.

2. Season the Pork

Season cubed Pork with your favorite pork seasoning

3. Braze the Pork

With minimal oil, braze pork, onion, and minced garlic in a large skillet until pork is cooked through.

4. Add to Crockpot

Add all ingredients to your crockpot: pork, chicken broth/stock, tomatoes, potatoes, seasonings, and green chile. Simmer for 3 - 4 hours

5. Enjoy
