Dried Red Hatch Chile Pods are the perfect way to create authentically Mexican red enchilada sauce for traditional recipes.

To prep for use in food, chop off the stem and remove the seeds from the inside (don't forget the latex gloves!) Next, rinse the pods, and take out as many seeds as possible. Getting them all out is unnecessary because they will be strained out in the colander process. Boil/ simmer the pods for about 30 - 45 minutes to rehydrate, making them perfect for many recipes. Put the rehydrated pods in a blender and puree until they reach a smooth consistency. Pour the pods through a colander to remove the remaining skins and seeds. The best colander is a cone-shaped colander with a wooden mallet to press the pureed chile through the colander leaving the skins and seeds behind. You can purchase this kind of colander (Here). 

While they are best known for making them into red sauce, the rehydrated peppers can also be deliciously used in salsas, soups, or stews. Using them dried, you can even make your own chile powder.
