The Pure Green is exactly that, pure Hatch Green Chile. We made a puree from fresh New Mexican Green Chile, then roasted additional fresh Hatch Green Chile, peeled and cut them into large chunks. We put these roasted chunks of Hatch Green Chile into the puree with a little garlic and salt and the result is a delicious new sauce packed with flavor. It truly is “Pure Green! The Hatch Red & Green Blend Chile is made with the pure green puree and fire roasted Hatch red Chile. The color is so beautiful with the red and green together and yet contrasting and the flavor is absolutely unique. It has the savory flavor of the green puree and the sweet fire-roasted flavor of the red chunk.
