Stuffed Yellow Squash

Pre-heat oven to 350 degrees.
Lightly spray medium baking dish. (Make sure your squash will lay flat in bottom of dish with a little extra room on sides.

3-4 Large Yellow goose-neck Squash
1/2 C. Fresh Chile Taco meat per Squash
1/4 C. Asadero Cheese per Squash

Wash Squash and cut a deep “V” shaped wedge in the widest part of the squash. Lift out the wedge section and set aside.  
Butter the inside of the Squash and the inside of the wedge and arrange in the sprayed pan. Place the wedge skin side down in pan.

Then fill the squash with Fresh Chile Taco meat and top with cheese.
Put about 1/4 in of water in bottom of pan and cover with foil.

Place in oven for 25-30min. While you enjoy a favorite beverage.

Squash is done when a fork or toothpick inserts easily.
